Texas Barbecue Doesn't Get Any Better Than LOUIE MUELLER'S BBQ in Taylor… Period!

The BBQ brisket is so heavenly you will think Angel's cooked it.

Don't insult Louie Mueller's BBQ joint by referring to it as a BBQ restaurant. It would be like calling the Vatican a church.

The best barbecue ribs and brisket on the planet are served on this hallowed ground. Cooked to perfection by Bobby Mueller, son of Louie. Bobby is at work 4 am preparing the day's smoky feast six days a week.

And that, more than the grand smoked stained building, super quality meat, or even Texas' most beloved hand brewed barbecue sauce is why Mueller's enjoys the reputation it does.

Bobby Mueller cooks every morsel of food sold here. The consistency is remarkable. That's why Mueller's stands out from the crowd. Nothing can prepare you for your first visit here.

For Texas barbecue lovers, it's gotta be better than a kids first trip to Disneyland.

This place has been kicking out the best barbecue in Texas since 1959. That's why this former ladies basketball court reeks of sweet oak smoke.

I've not eaten barbecue that marries the perfect combination of smoke, spice and quality meat like Louie Mueller's. You taste the meat here more than any barbecue I've eaten.

The barbecue brisket has a perfect red smoke ring. But the smoke flavor is not overwhelming. Bobby credits oak wood for his barbecue's subtle smoke flavor. It's more than that.

I know Bobby and his beautiful wife. We had a nice conversation at a Central Texas BBQ Association event. Bobby is the difference. A master on a level with the late great barbecue master cook, Laron Morgan of Crosstown BBQ in Elgin (now closed).

And that is what makes the Louie Mueller experience so special. The barbecue.

I don't use sauce… except at Mueller's. It's a very thin, tart, vinegary concoction that brings out the natural flavors of Bobby's heavenly creations.

Mueller's brisket is the best in Texas barbecue. I recommend ordering a thick and juicy cut of brisket. Lean is good, but the flavor is the melted fat. What we call juices. Ask for a sample while you wait for your order to be weighed. Lance (the cutter – looks just like Keven Spacey!) will be happy to oblige.

Barbecue ribs at Mueller's have a reputation all their own.

Big, meaty, firm around the bone with perfectly tender edges. Not overly spiced with pepper and salt like other ribs I've eaten. Again the rib flavor really comes through without an after taste you belch up for days.

Bobby does spice better than anyone with his absolutely killer jalapeño smoked sausage. A Mexican party for the taste buds. Makes my nose run, which is my ultimate test of spice. You have to enjoy something a great deal knowing the price of admission is blowing your nose at the table.

Your order is served on wax paper as is the custom at our Texas barbecue shrines.

Help yourself ice tea, and quality homemade sides round out the Louie Mueller dining experience. If you can call being elbow deep in barbecue brisket, ribs, sausage and sauce a dining experience. Let's be honest here. You go to Mueller's to pig out. No other reason. Gorge until you can't stand, barbecue orgy.

If you only visit one barbecue joint on your trip to Texas, make it Mueller's.

Bobby does it the old way. Taste real history in the very building Texas barbecue's first chapter was written. A perfect ten. Flawless.

Anyone who writes a negative review of Louie Mueller's doesn't know Texas barbecue. Ignore them. The authors are probably chowing down on Chilli's baby backs. Complimenting the zit faced high school senior chef. I didn't mean for that to sound too snobbish.

MENU: brisket, sausage, jalapeno and chopotle sausage, pork loin, beef ribs, pork ribs, pork steaks (Tuesday through Friday), bone-in rib eye steaka (Tuesday through Friday), chicken breast, fryers (Saturday only). Sides; beans, potato salad, cole slaw.

DON'T MISS: Brisket and pork ribs.

With sadness I must report, Bobby Mueller passed away September 6, 2008. Bobby was a friend of mine. Some of the most memorable and happy times of my life were sitting at my favorite table with a pile of Bobby's ribs and brisket in front of me. Bobby's BBQ is the stuff of Texas barbecue legend. The man was a devout Christian and the most honest, humble and genuine man I ever met. If you knew Bobby I know you will miss him. My sincerest sympathy goes out to Mrs. Mueller; his children Wayne Mueller, John Mueller and LeAnn Mueller; and his four grandchildren, Robert Mueller II, Johnson Mueller, Andrew Mueller and Erica Mueller. As well as Lance and the Louie Mueller crew.
